Air Fryer Turkey Burgers with Zucchini

Too hot out to fire up the grill? Low on time? These burgers are cooked in the air fryer and the moistness of the zucchini keeps them juicy and delicious. Consider using any ground protein of your choice. Substitute the bun for a lettuce wrap if you’d like!

Time: 15 minutes

Ingredients:

• 6 oz grated zucchini, when squeezed, 4.25oz

• 1 lb. 93% lean ground turkey

• ¼ cup seasoned whole wheat or gluten-free breadcrumbs

• 1 clove garlic, grated

• 1 tbsp grated red onion

• 1 tsp kosher salt and fresh pepper

• Oil spray

Air Fryer Baked Zucchini Sticks

Coach Katie loves making these zucchini sticks for her kiddos. They’re a fun, finger food without the greasiness of deep-fried food. Dip in any sauce or condiment of your choice. Pair these with any protein or pack them to take on the go.

• 4 medium, 7 oz each zucchini, ends trimmed

• 3 large egg whites, beaten

• 1/4 tsp kosher salt

• 2 tbsp grated Pecorino Romano cheese

• 1/4 tsp garlic powder

• 1/2 cups quick marinara sauce for dipping, optional

This is a simple one-pan meal done in the air fryer! Mix up the veggies options or change up the protein. This can be ideal for quick dinners or lunches too.

Coach Richel loves these Fish Tacos. There is no shortage of options for toppings and garnish. This breading could also work for other types of fish, shrimp, or chicken.
