The Quickest Dinner Ever – Stacked Baked Tortillas


100% corn tortillas, small

Grilled chicken breast (prepped in advance, sliced)

Vegetarian refried beans (canned, non-BPA, organic if preferred)

Sliced red peppers and white onion

Black olives

Medium salsa

Sour cream of choice (check out Wayfare’s Plant-Based Style)


Clean an open counter top thoroughly with hot water and soap. Wipe it dry for a clean prepping surface. Lay out several corn tortillas, enough to feed you and your household. Use a rubber spatula to evenly spread vegetarian refried beans on each tortilla. Top the tortilla/beans with sliced, grilled chicken breast, peppers and onions. Using a large, flat spatula, move four topped tortillas onto a cookie sheet and place them in the oven at 350 degrees for 10 minutes. Once out of the oven, top each of them with a teaspoon each of olives, salsa and sour cream. Keep rotating them in and out of the oven until all of them are ready to be served. Let your family members individualize them if desired as they are coming out of the oven for a fun, hands-on experience for young and old. ENJOY!
